Ingredients:

  • ½ cup rolled oats

  • 1 medium carrot, finely grated (approximately ½ cup)

  • 1¼ cups milk of choice

  • ¼ cup water

  • 1 tsp ghee (optional)

  • ¼ tsp ground cardamom

  • 4–5 strands of saffron (kesar)

  • Pinch of cinnamon

  • 1–2 tsp maple syrup/sweetener of your choice (optional)

  • 1 tbsp finely ground almonds and pistachios (optional)

Instructions

1. Warm 2 tablespoons of the measured milk and add the saffron strands. Let steep for 5 minutes to release their color and aroma.

2. Heat the ghee in a small saucepan over medium-low heat. If skipping the ghee, add 2–3 tablespoons of milk or water instead. Add the finely grated carrots and cook for 3–4 minutes, stirring occasionally, until they begin to soften.

3. Stir in the rolled oats, remaining milk, water, cardamom, cinnamon, and saffron-infused milk.

4. Cook over low heat for approximately 8–12 minutes, stirring frequently, until the oats are creamy and the carrots are completely tender.

5. Add a splash of milk or water if the oats become too thick.

6. Remove from heat, stir in maple syrup if desired, and top with finely ground nuts.
